Fresh Hop is an English Pale Ale that lives up to its name, brewed with hops harvested just six hours before being added to the boil.
This year, our Head Brewer, Ol, embarked on a journey to Malvern for the annual Charles Faram Hop Walk. During his trip, Ol took advantage of being down south to visit Church House Farm in Herefordshire to secure the early harvesting of the hop variety, Goldings.
On the morning of September 6th, Ol collected the freshly picked Goldings hops and made the 200-mile journey back to North Yorkshire. The rest of the Rooster’s team had already started the brew day, timing it to coincide with Ol’s arrival. Within minutes of the hops reaching the brewery, they were added to the boiling wort.
Our Fresh Hop Pale Ale showcases the Goldings hop variety in all its glory. Grown at Church House Farm by Tom Probert, these hops provide delicate, sweet aromas and a hint of spice on the finish. Goldings is traditionally renowned as the perfect finishing hop for British Pale Ales, and this beer is a testament to its classic character.
Rooster’s has a long-standing reputation for brewing unique and innovative beers, often highlighting the nuances of different hop varieties in pale ales. Fresh Hop, available exclusively in cask, is a limited-edition 4.3% pale ale in keeping with Rooster’s tradition.

An all English pale ale brewed with 100% Goldings hops from Church House Farm in Herefordshire to create delicate pine and floral aromas, with a touch of spice on the finish. The hops were harvested and collected by Rooster’s Head Brewer on the morning of the brew day (September 6th), making this one of the freshest beers you’re likely to try this year!
